Fish & Shellfish, Grilled & Smoked
By Karen Adler, Judith M. Fertig, Hardcover, 384 pages (2002).

Fish, often bottom-billed in many barbecue and grilling cookbooks with a few token recipes, succeeds spectacularly as the star of the show in this book. The authors argue that fresh fish and shellfish are a healthier option to other traditional barbecue meats due to their low-fat, low-calorie qualities. There's also wonderful variety, as demonstrated by the 300 recipes - presented in a clean, eye-pleasing layout - that pack this book. In addition, for folks who have a hard time getting fresh fish locally, there's a handy list of fish purveyors. This is a terrific cookbook that would fit nicely on any griller's bookshelf.

Fish Drying and Smoking
By Peter E. Doe (Editor), Hardcover,
250 pages (1998).
This book explains the current and traditional fish smoking and drying practices in terms of the basic underlying principles of biochemistry and food technology. Readers will soon become aware of the discrepancies between the basic scientific knowledge and modern technology on one hand, and the traditional processes described in some chapters. This book bridges that gap. The emphasis in this book in on the critical factors which affect the quality of products produced in less technological cultures-products which have been largely neglected in technically advanced countries - and on developments and innovations which have occurred in the last five years. The critical factors affecting the quality of fish products in technically advanced countries have been summarized. The answers to questions on the quality of smoked, cured and dried fish can be found from an understanding of the physical, chemical, and biological factors influencing the functionality of the product at every stage of its preparation and subsequent handling from the time the fish is harvested to the time it is eaten.

Book-Tips:

Trout and Salmon of North America
By Thomas McGuane, Robert J. Behnke and Joseph R. Tomelleri (Illustrator)
Binding: Hardcover, 352 pages
Publication date: September, 2002
Our Price: $ 28.00  - You Save: $ 12.00 (30%)

In ichthyology, the genus Oncorhynchus includes the world's 10 species of trout and salmon. To the everlasting thankfulness of America's 35 million anglers, North America is home to nine species of these elusive and delicious fish (five salmon and four trout). Behnke (Native Trout of Western North America), professor emeritus of fishery and wildlife biology, has brought his more than 50 years of studying, and fishing for salmon and trout, to wonderful effect. He provides readers with an authoritative compendium of the evolution, biology, ecology, habitats and behaviors of these prized game fish. A capsule legend that includes scientific name, other common names, habitat, size, life span and diet accompanies each entry, amazingly illustrated by Tomelleri (Fishes of the Central United States), whose fish seem to shimmer on the pages. Habitat maps, which include coastal waters, rivers, streams and lakes, are detailed and specific enough to be taken on fishing excursions. The book includes a good deal of fishing lore, as in the notations that describe the best flies, bait and lures for specific types of fish and locales. Behnke also ponders some of the more philosophical aspects of ecology and human responsibility for the environment. Along with full and clearly written scientific explanations, statistics and analysis, the author provides anecdotal and historical details that make this not just a field guide, but a fascinating read for those interested in the natural world. For the last word on trout and salmon, look no further than this guide.

Dear Reader,

here are the actual AquaTech NEWS and our new offer of the month (August 2002):

Use a biofilter material that provides shelter for your aquatic animals and reduce cannibalism, with:Artificial Seaweed bar (1 m long)

3 Artificial C-weed bars EUR   90,-
6 Artificial C-weed bars EUR 140,-
9 Artificial C-weed bars EUR 190,-

Larger quantities with additional discount.

All Prices in Euro ex works, VAT excl.

Seaweed in nature supplies nutrition sources and shelters for crustaceans and fish in their environment, thus the crustaceans and fish are attracted to it. Artificial seaweed (patent pending) is specially produced for this purpose from batches of positive buoyancy, UV stable, folded HD-PE inert material to create a leaf-like microenvironment. The leaf is specially reinforced and folded, it feels like the seaweed in nature. A very high surface area of 60 m2 per one meter long self sinking (2 kg) bar, with built in aeration, acts as an excellent biofilter to support the nitrification process in a pond or recirculation system. Its aerations prevent solid waste from sticking to the media and helps remove solids out of the tank. The idea behind is also to supply shelters to aquatic animals (like crustaceans and fish), to allow increased numbers of individuals living in the water per unit volume and thus reduce or inhibit cannibalism, as the animals find shelters and are not visible to each other.

Biology of the Spotted Seatrout
by Stephen A. Bortone (Editor)
Binding: Hardcover, 336 pages.
Publication date: July 2002
Price: $ 149.95

The spotted seatrout is an important species not only for recreational and commercial fisheries, but also as an integral part of many estuarine ecosystems. As one of the few fishes that live its entire life within an estuarine system, the species has tremendous potential as a monitor or sentinel for estuarine conditions. Prepared by the foremost authorities in their respective fields, Biology of the Spotted Seatrout presents an up-to-date summary of what is known about the basic biology of this important species. This innovative reference provides current life history information on this species for the expressed purpose of beginning the task of assessing differences in estuarine restricted sub-populations of spotted seatrout. It serves as a model of a biological summary directed toward determining which of the life history parameters will most aptly serve as bioindicators to meet overall environmental management needs. It integrates estuarine specific life history features into the overall management of both estuaries and an estuarine dependent fishery.Biology of the Spotted Seatrout includes a classic systematic approach to studying the relationships between seatrout genera as well as a more modern approach to investigating intra- and inter-estuarine differences in genetic structure. Ecologists, fisheries biologists and managers, and environmental scientists worldwide will be able to use the information presented in this book as a model on which to establish a database of information to be used to assess and compare estuarine conditions and environmental health. This valuable book serves as a blueprint for bringing together the biological criteria necessary to begin landscape scale comparisons of estuaries based on the biological information of totally estuarine dependent species, such as the spotted seatrout.

Marine Fish Culture
by John W. Tucker, 1998. Hardcover.

With the depletion of wild fish stocks by factors such as overfishing, habitat degradation, pollution, and red tides, the pressures and incentives for commercial farming of marine food and aquarium fish have increased dramatically. Concurrent with that trend has been an increase in the experimental use of live marine fish in various basic and applied sciences, for example, in developmental, ecological, and toxicological research. Marine Fish Culture is the first comprehensive reference and textbook on this subject and provides information on more than 870 species in 129 families. The book is the product of the author's 27 years of research and teaching in fish culture and biology. Approximately 12,000 references through June 1998 were screened in writing this work, and more than 4,000 are included in the text. Marine Fish Culture covers all the major topics necessary for raising marine fish, including overviews of commercial production statistics, water sources, water treatment, rearing units, energetics, health, and handling; detailed reviews of fish characteristics relative to rearing, the rearing environment, reproduction, nutrition of larvae, and nutrition of juveniles and adults; and reviews of current rearing knowledge for food, bait, and ornamental marine fish, by family.

The Sturgeons and Paddlefishes (Acipenseriformes) of the World: Biology and Aquaculture.
By Martin Hochleithner and Joern Gessner.

This is an enlarged and revisted, english translation of the german book "STÖRE".
Softbound, 208 pages. ISBN 3-9500968-0-9
AquaTech Publications, Kitzbuehel Austria, 2001.
Price: EUR 40,-

Sturgeon aquaculture has been developing rapidly over the last 10 years. With recent advancements, the requirements of the industry have been changing and the techniques utilized have been changed and adapted rapidly too. Based on the former Soviet experiences, a new technology has been developed and the background of sturgeon biology has been enlightened in many respects.
This work is supposed to close the information gap between scientists and practitioners. The appeal will be far reaching since biologists, field technicians, aquaculturists, fisherman and fish enthusiasts, would all find a wealth of practical information for their field of study.
The book has the style of a species synopsis coupled with everything anyone needs to know concerning the reproduction and culture of sturgeons. It summarizes the current knowledge on all sturgeon and paddlefish species worldwide into a practitioner-oriented working guide, including the experience and research data of the authors for more than a decade.

The book is structured into four sections, comprising:
- An introduction, gross morphology, general ecology, systematics of sturgeons, and the sturgeon hybrids.
- A detailed description of all known species worldwide including their description, their distribution, their ecology, and their current status as well as a revisted key to the species.
- An aquaculture section including the different methods of broodstock management, handling, artifical propagation, incubation techniques, feeding and ongrowing strategies, management of pond and intensive production.
- As well as an overview on fisheries techniques, stock management, processing of sturgeons and their products.
It is concluded with several annexes, including sturgeon egg and larval development, parasites and prey organisms as well as international names and synonyms for the species.

The Bibliography of Acipenseriformes.
By Martin Hochleithner, Joern Gessner and Sergej Podushka.
A compensive bibliography about Acipenseriformes, which includes nearly all publications from arround the world. Over 10000 references are listed alphabetically and cross indexed to species and headings.
Available as E-book on CD-ROM (including Microsoft® Internet Explorer and Adobe® Acrobat Reader), or printed in folder (over 490 DIN-A4 pages). ISBN 3-9500968-1-7
AquaTech Publications, Kitzbuehel Austria, 2001.
Price: EUR 80,-

This collection of literature dealing with all species and various topics related to Acipenseriformes is intended to serve as a ready reference for researchers, fisheries managers, aquaculturists and conservationists who work with this ancient fish group. Almost all sturgeon and paddlefish species are threatened or endangered. Information on these fishes is still by no means complete in any field, whether related to sturgeon aquaculture, biology or management. In many aspects sturgeon biology is very different from that of other fishes. Due to the current rate of exploitation, the availability of information might prove crucial for the survival of these species. This is an attempt to improve information concerning the work carried out and to increase its availability.

CITES Identification Guide - Sturgeons and Paddlefish.
Guide to the Identification of Sturgeon and Paddlefish Species Controlled under the Convention on International Trade in Endangered Species of Wild Fauna and Flora.
Text in English, French, and Spanish.
By Y. Lafleur, P. Vecsei, R. Charette, I. Trukshin, T. Maliepaard, M. Hochleithner.
Environment Canada, 2001. ISBN 0-660-61641-6
Ringbound, 180 pages.
Price: EUR 40,-

The Convention on International Trade in Endangered Species of Wild Fauna and Flora, commonly refered to as CITES, has controlled few forms of wildlife trade with the history of illegal activities as the trade in caviar. The involvement of organized crime in the caviar trade has been well documented and enforcement personnel have been killed trying to combat sturgeon poaching.
Sturgeon species have existed since pre-history but many are now seriously threatened with extinction. Future efforts to conserve sturgeons must take into account socio-economic factors, water pollution, destruction of habitat and reduced access to traditional spawning grounds. Implementation and enforcement of the Convention can, however, have a major beneficial effect. That is why the CITES Secretariat believes this Guide will be of substantial assistance to enforcement staff in their efforts to tackle illegal trade in sturgeon and sturgeon products and is delighted to be associated with its well illustrated publication.
